Instructions:

1. Sort and Rinse the Beans:

   - Spread the beans out on a clean surface to remove any small stones, dirt, or damaged beans.

   - Rinse the beans thoroughly under cold water.

2. Soak the Beans(Optional but recommended for faster cooking):

   - Overnight Soaking: Place the beans in a large bowl and cover them with 3-4 inches of water. Let them soak for 6-8 hours or overnight. This helps soften the beans and reduces cooking time.

   - Quick Soaking: If you're short on time, bring the beans and water to a boil, let them boil for 2 minutes, then turn off the heat and let them soak for 1 hour.

3. Drain and Rinse:

   - After soaking, drain the beans and rinse them again under cold water.

4. Cook the Beans:

   - In a large pot, combine the beans with 6-8 cups of fresh water. The water should cover the beans by at least an inch.

   - Add the chopped onions, garlic, and bay leaves if using. These add flavor to the beans.

   - Bring the pot to a boil over high heat, then reduce the heat to low and let the beans simmer.

   - Cover the pot partially with a lid, allowing steam to escape. This helps the beans cook evenly.

   - Cook the beans for 1-2 hours, depending on the type of beans and whether they were soaked. Stir occasionally and check the water level, adding more if needed.

   - Begin checking the beans for doneness after about 1 hour. The beans should be tender but not mushy when done.
