How to cook cabbage 🥬 Stew 🍲

 Here's a simple recipe for making cabbage stew:



Ingredients:

- 1 medium-sized cabbage, chopped

- 2 tablespoons of vegetable oil or palm oil

- 1 large onion, chopped

- 2-3 cloves of garlic, minced

- 2-3 tomatoes, chopped (or 1 can of diced tomatoes)

- 2 carrots, sliced (optional)

- 1-2 bell peppers, chopped

- 2 cups of chicken or vegetable broth (or water)

- 1-2 cups of protein (chicken, beef, fish, or tofu)

- 1 teaspoon of thyme

- 1 teaspoon of curry powder

- 1-2 seasoning cubes (like Maggi or Knorr)

- Salt and pepper to taste

- 1-2 bay leaves (optional)

- 1-2 Scotch bonnet peppers (optional, for heat)



Instructions:


1. Prepare the Ingredients

   - Wash and chop the cabbage into bite-sized pieces.

   - Chop the onions, garlic, tomatoes, carrots, and bell peppers.

   - Prepare your protein by cutting it into small pieces.


2. Cook the Protein:

   - Heat the oil in a large pot over medium heat.

   - Add your chosen protein and cook until browned on all sides. If using fish, you can fry it separately to prevent it from breaking apart.

   - Remove the protein from the pot and set it aside.



3. Sauté the Vegetables:

   - In the same pot, add a bit more oil if needed, then sauté the onions until they become translucent.

   - Add the garlic and cook for another 1-2 minutes until fragrant.

   - Stir in the chopped tomatoes and cook until they start to break down into a sauce (about 5-7 minutes).


4. Add the Seasonings:

   - Add the thyme, curry powder, seasoning cubes, and bay leaves. Stir well to combine.

   - If using Scotch bonnet peppers, add them at this point for a spicy kick.


5. Add the Cabbage and Broth:

   - Add the chopped cabbage to the pot and stir to combine with the tomato mixture.

   - Pour in the broth or water. The liquid should just about cover the cabbage. If needed, add more water or broth.

   - Bring to a boil, then reduce the heat and let it simmer.



6. Simmer the Stew:

   - Allow the stew to simmer for about 20-30 minutes, or until the cabbage is tender.

   - If you’re using carrots or bell peppers, add them about 10 minutes before the stew is done so they stay slightly crisp.


7. Add the Protein:

   - Return the cooked protein to the pot and stir it into the stew.

   - Let it cook for an additional 5-10 minutes to absorb the flavors.


8. Season to Taste:

   - Taste the stew and adjust the seasoning with salt and pepper as needed.


9. Serve:

   - Serve the cabbage stew hot with rice, yam, or your preferred side.
