Cooking coconut rice is simple and delicious. Here's a basic recipe:
Ingredients:
- 2 cups of long-grain rice (preferably jasmine or basmati)
- 1 can (400ml) of coconut milk
- 1 cup of water (you can adjust this depending on the rice type)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt (to taste)
- 1 tablespoon vegetable oil or butter
- Optional: bay leaf, thyme, or a few slices of ginger for extra flavor
Instructions:
1. Rinse the Rice: Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming too sticky.
2. Sauté the Aromatics: Heat the vegetable oil or butter in a medium-sized pot over medium heat. Add the chopped onions and minced garlic. Sauté until the onions are soft and translucent.
3. Add the Rice: Add the rinsed rice to the pot, stirring it with the onions and garlic for a minute or two to toast the rice lightly.
4. Add Coconut Milk and Water: Pour in the coconut milk and water. Add the salt, and if using, add the bay leaf, thyme, or ginger. Stir to combine.
5. Cook the Rice: Bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed all the liquid.
6. Fluff the Rice: Once done, remove the pot from the heat. Let it sit covered for 5 minutes, then fluff the rice with a fork.
7. Serve: Your coconut rice is ready to serve! It pairs well with curries, grilled chicken, or any dish of your choice.
