Ingredients:
- 4 large potatoes
- Vegetable oil (for frying)
- Salt (to taste)
Instructions:
1. Prepare the Potatoes:
- Wash and peel the potatoes.
- Cut them into thin, even strips (about 1/4 inch thick).
2. Soak the Potatoes:
- Place the cut potatoes in a bowl of cold water.
- Let them soak for at least 30 minutes. This removes excess starch and helps the fries become crispy.
3. Dry the Potatoes:
- Drain the water and pat the potatoes dry with a clean towel or paper towels.
4. Heat the Oil:
- Fill a deep frying pan or pot with enough oil to submerge the fries.
- Heat the oil to about 325°F (165°C).
5. First Fry (Blanching):
- Fry the potatoes in batches for about 3-5 minutes. They should be soft but not browned.
- Remove the fries and let them drain on paper towels.
6. Increase the Heat:
- Raise the oil temperature to 375°F (190°C).
7. Second Fry:
- Fry the potatoes again in batches for 2-3 minutes or until they are golden and crispy.
- Remove the fries and drain them on paper towels.
8. Season:
- Sprinkle the fries with salt while they're still hot.
