how to make snail pepper sauce

To make a delicious snail pepper sauce, follow these steps:

Ingredients:

- 10-15 cleaned snails

- 2-3 scotch bonnets (ata rodo)

- 1-2 red bell peppers (tatashe)

- 1 onion

- 2-3 cloves of garlic

- 1 thumb-sized ginger

- 2 tablespoons of palm oil or vegetable oil

- Seasoning cubes (to taste)

- Salt (to taste)

- A handful of chopped fresh basil or scent leaves (optional)

Instructions:

1. Clean the Snails:

   - Ensure your snails are thoroughly cleaned. You can use lime or alum to remove the slime. After cleaning, boil the snails in water for about 10-15 minutes with a pinch of salt. Drain and set aside.

2. Prepare the Pepper Mix:

   - Blend the scotch bonnets, bell peppers, onion, garlic, and ginger into a coarse paste. You can blend them together or separately depending on your preferred texture.

3. Cook the Sauce:

   - Heat the palm oil or vegetable oil in a pan over medium heat. Once hot, add the blended pepper mix. Fry for about 10-15 minutes, stirring occasionally, until the oil starts to separate from the sauce.

4. Add the Snails:

   - Add the boiled snails to the sauce. Stir well to combine, and let it cook for another 10 minutes, allowing the snails to absorb the flavors.

5. Season:

   - Add seasoning cubes and salt to taste. If using basil or scent leaves, add them in the last 2-3 minutes of cooking.

6. Serve:

   - Your snail pepper sauce is ready to serve! It fits well with rice, yam, plantains, or can be enjoyed on its own as a snack.

Enjoy your delicious snail 🐌 pepper sauce!
