Ingredients:
- 10-15 cleaned snails
- 2-3 scotch bonnets (ata rodo)
- 1-2 red bell peppers (tatashe)
- 1 onion
- 2-3 cloves of garlic
- 1 thumb-sized ginger
- 2 tablespoons of palm oil or vegetable oil
- Seasoning cubes (to taste)
- Salt (to taste)
- A handful of chopped fresh basil or scent leaves (optional)
Instructions:
1. Clean the Snails:
- Ensure your snails are thoroughly cleaned. You can use lime or alum to remove the slime. After cleaning, boil the snails in water for about 10-15 minutes with a pinch of salt. Drain and set aside.
2. Prepare the Pepper Mix:
- Blend the scotch bonnets, bell peppers, onion, garlic, and ginger into a coarse paste. You can blend them together or separately depending on your preferred texture.
