 Nigerian Fried Rice is a flavorful dish that is served at parties and special occasions. etc. It’s made with rice, mixed vegetables, and seasoned with spices. Here's how to make it:


 Ingredients:
- 3 cups long-grain parboiled rice
- 1 ½ cups mixed vegetables (carrots, green beans, peas, sweet corn)
- 1 cup cooked chicken liver or shrimp (optional)
- 1 ½ cups chicken or beef stock
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1-2 bay leaves
- 1-2 teaspoons ground turmeric or curry powder (for color)
- 1 teaspoon ground white or black pepper
- 2-3 tablespoons soy sauce (optional)
- Salt to taste
- 1/4 cup vegetable oil
- 1 tablespoon butter (optional for extra flavor)
- Sliced green onions or spring onions (for garnish)

Instructions

 Step 1: Prepare the Rice

1. Parboil the Rice:
   - Wash the rice in cold water until the water runs clear. Parboil the rice by boiling it in water for about 10 minutes, or until it is halfway cooked. Drain the rice in a sieve and set aside.

2. Season the Stock:
   - In a pot, bring the chicken or beef stock to a boil. Add the curry powder, thyme, bay leaves, turmeric (for color), and a pinch of salt. Stir well.

3. Cook the Rice:
   - Add the parboiled rice to the boiling stock. Reduce the heat to low, cover the pot, and let it cook until the rice absorbs the stock and becomes tender. This should take about 10-15 minutes. Fluff the rice with a fork and set it aside.

Step 2: Stir-Fry the Vegetables


1. SautΓ© the Onions and Garlic:
   - In a large pan or wok, heat the vegetable oil and butter (if using) over medium heat. Add the diced onions and garlic, and sautΓ© until fragrant and translucent.

2. Add the Vegetables:
   - Add the mixed vegetables to the pan. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp. If you're using chicken liver or shrimp, add them at this stage and cook until done.

3. Season the Vegetables:
   - Season the vegetables with soy sauce (if using), ground white or black pepper, and a little salt. Stir to combine.

Step 3: Combine the Rice and Vegetables

1. Mix the Rice and Vegetables:
   - Add the cooked rice to the pan with the vegetables. Stir-fry everything together for about 5-7 minutes, ensuring the rice and vegetables are well combined and heated through.

2. Garnish:
   - Garnish with sliced green onions or spring onions.

Step 4: Serve

1. Serve the Fried Rice:
   - Serve the Nigerian Fried Rice with fried chicken, grilled meat, or any protein of your choice. It can also be paired with Nigerian Jollof Rice for a complete party meal.
