Puff puff is a popular West African snack, similar to doughnuts but without a hole. It’s sweet, soft, and fluffy on the inside, with a slightly crispy exterior. Here's how to make puff puff:
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon active dry yeast
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg (optional)
- 1 1/4 cups warm water (adjust as needed)
- Vegetable oil for frying
Instructions:
1. Activate the Yeast:
- In a small bowl, dissolve the yeast and 1 tablespoon of sugar in about 1/4 cup of warm water. Let it sit for about 5-10 minutes until it becomes frothy. This step ensures that the yeast is active.
2. Mix Dry Ingredients:
- In a large mixing bowl, combine the flour, remaining sugar, salt, and nutmeg (if using).
3. Add Wet Ingredients:
- Pour the activated yeast mixture into the dry ingredients. Gradually add the remaining warm water and mix until you have a smooth, thick batter. The batter should be thick but still a bit loose, almost like a thick pancake batter.
4. Let the Dough Rise:
- Cover the bowl with a clean cloth or plastic wrap and let the dough rise in a warm place for about 1-2 hours or until it doubles in size.
5. Heat Oil:
- In a deep frying pan or pot, heat enough vegetable oil to submerge the puff puff balls. The oil should be moderately hot, around 350°F (175°C). If the oil is too hot, the puff puff will brown quickly on the outside but remain uncooked inside.
6. Fry the Puff Puff:
- Once the dough has risen, use your hands or a spoon to scoop small balls of dough into the hot oil. Be careful not to overcrowd the pan.
- Fry until golden brown on all sides, turning occasionally to ensure even cooking. This should take about 3-5 minutes per batch.
7. Drain and Cool:
- Remove the puff puff from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
8. Serve:
- Puff puff can be served warm or at room temperature. You can enjoy them plain or dusted with powdered sugar.
Enjoy your delicious puff puff!
