Ingredients:

                  For the Dough:

1 cup all-purpose flour

1/4 tsp salt

2 tbsp oil or melted butter

Water (as needed to knead)

            For the Filling:

2 medium potatoes, boiled and mashed

1/2 cup green peas (boiled)

1/2 tsp cumin seeds

1/2 tsp coriander powder

1/2 tsp garam masala

1/4 tsp turmeric powder

1/2 tsp red chili powder (optional)

Salt to taste

1 tbsp oil

Fresh coriander leaves, chopped (optional)

                  Instructions:

             1. Prepare the Dough

In a bowl, mix flour, salt, and oil. Rub the oil into the flour with your fingertips until it resembles bread crumbs.

Gradually add water and knead into a stiff dough. Cover with a damp cloth and set aside for 30 minutes.

              2. Prepare the Filling

Heat oil in a pan and add cumin seeds.

Add boiled green peas, mashed potatoes, salt, coriander powder, garam masala, turmeric powder, and chili powder.

Mix well and cook for 2-3 minutes, then add fresh coriander. Allow it to cool.

                  3. Shape the Samosas

Divide the dough into equal portions. Roll each portion into a ball, then flatten and roll into a thin oval or round shape.

Cut each circle in half, creating two semi-circles.

Take one semi-circle, form a cone by folding it, and press the edges with a bit of water to seal.

Fill each cone with the prepared filling and seal the top edges.

4. Fry the Samosas

Heat oil in a deep frying pan over medium heat. When the oil is hot, carefully add samosas and fry until golden brown and crispy.

Remove from the oil and place on paper towels to drain excess oil.

                        5. Serve

Enjoy your samosas with mint chutney or tamarind sauce!
