Ingredients:
1 kg yam (about 2-3 medium-sized tubers)
4 cups water (adjust as needed)
1 medium onion, chopped
1-2 bell peppers, chopped
2-3 tablespoons palm oil or vegetable oil
1-2 teaspoons ground pepper (or to taste)
Salt (to taste)
Optional: vegetables (like spinach or kale), fish, or meat for added flavor
Instructions:
Peel the yam and cut it into cubes or slices.
Rinse the yam pieces in cold water to remove excess starch.
In a pot, add the yam pieces and enough water to cover them.
Add salt and bring to a boil. Cook until the yam is soft (about 15-20 minutes).
Once the yam is soft, use a wooden spoon or a potato masher to mash some of the pieces to create a creamy consistency, while leaving some chunks intact.
In a separate pan, heat palm oil (or vegetable oil) and sauté the chopped onions and bell peppers until soft.
Add the ground pepper and any optional ingredients (like fish or meat) and cook for a few more minutes.
5. Combine:
Pour the sautéed mixture into the pot with the yam. Stir well to combine. Adjust the consistency by adding more water if necessary.
6. Final Touch:
Cook for another 5-10 minutes, allowing the flavors to meld. Add any leafy vegetables towards the end if using.
7. Serve:
Taste and adjust seasoning as needed. Serve hot.
