Ingredients:
- 4 large eggs
- 200g (1 cup) granulated sugar
- 200g (1 2/3 cups) all-purpose flour
- 1 tsp baking powder
- 100g (1/2 cup) unsalted butter, melted
- 1 tsp vanilla extract (optional)
- A pinch of salt
- 2 tbsp milk (optional, for extra moisture)
Instructions:
1. Preheat Oven:
Preheat your oven to 180°C (350°F). Grease and line an 8-inch round cake pan with parchment paper.
2. Prepare Dry Ingredients:
In a bowl, sift together the flour, baking powder, and salt. Set aside.
3. Beat Eggs and Sugar:
In a large mixing bowl, beat the eggs and sugar together using an electric mixer on high speed for about 5-7 minutes, until the mixture is thick, pale, and has tripled in volume.
4. Add Flour:
Gently fold the sifted flour mixture into the egg mixture using a spatula. Be careful not to overmix, as you want to maintain the airiness of the batter.
5. Add Butter and Vanilla:
Carefully fold in the melted butter and vanilla extract. If the batter is too thick, you can add 1-2 tablespoons of milk to loosen it.
6. Bake:
Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
7. Cool:
Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
