Here's a simple recipe to prepare a delicious vegetable sauce for rice:


                   Ingredients


2 tablespoons vegetable oil


1 onion, chopped


2 cloves garlic, minced


1 bell pepper (red or green), diced


1 carrot, julienned or chopped


1 zucchini, sliced


1 cup broccoli florets


1/2 cup green peas (optional)


2-3 medium tomatoes, diced (or 1/2 cup tomato puree)


1 teaspoon curry powder


1/2 teaspoon thyme


Salt and pepper, to taste


Fresh parsley or basil for garnish (optional)



             Instructions

Heat the Oil:



1.  In a large skillet or saucepan, heat the vegetable oil over medium heat.


Sauté the Onions and Garlic:




2. Add the chopped onion and garlic to the pan, and sauté for about 2 minutes until softened and fragrant.


Add Vegetables:



3. Add the diced bell pepper, carrots, zucchini, and broccoli. Cook for 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.


Add Tomatoes: 



4.Stir in the diced tomatoes or tomato puree. Allow it to cook for 5 minutes, letting the tomatoes soften and release their juices.


Season: 


5. Add the curry powder, thyme, salt, and pepper. Mix well, and adjust seasoning to taste. Let the sauce simmer for another 5-10 minutes.


Add Green Peas: (Optional):


6. Stir in the green peas and cook for an additional 2 minutes.



7. Serve:


Garnish with fresh parsley or basil. Serve over steamed rice.
